Beef Tacos with Spicy Rice

Beef Taco with Spicy Rice

Ingredients
  

Beef Taco

  • 500 g Good Quality Beef Mince
  • 1 Red Chilli De seeded and Chopped
  • 1 Yellow Pepper Diced
  • 2 White onions Diced
  • 1 Red Onion Sliced
  • 3 Spring Onions Sliced
  • 2 Cloves Garlic Diced
  • 2 tbsp Tomato Puree
  • 1 tbsp Buffalo Sauce
  • 2 tbsp Sweet Chilli sauce
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tbsp Oregano
  • 1 tbsp Paprika
  • 1 tbsp Cumin
  • 1 Beef Stock Cube
  • 1 Cup Water
  • 100g Emmental Cheese Grated
  • 100g Cheddar Grated
  • 4 Corn Tortillas

Rice

  • 100 g White Rice Cleaned
  • ½ Red Pepper Roughly Chopped
  • 1 White Onion Diced
  • 1 Cup Frozen Peas
  • 1 Cup Frozen Sweetcorn
  • ½ tsp Dried Chilli Flakes
  • 1 tsp Cumin
  • 1 tbsp Turmeric
  • ½ tsp Paprika
  • 1 Chicken Stock Cube
  • 500 ml Water

Instructions
 

Rice – Start first

  • Fry pepper and onion in heated oil for 2 minutes; stirring constantly
    Add dried spices to the pan and cook for further 1 minute (Add more oil if the mixture is dry)
    Add rice, water and chicken stock to the hot pan
    Bring mixture to boil, then immediately turn the heat to lowest possible and add the frozen peas and corn(move to a smaller hob if needed))
  • Cover and cook for 30 mins, checking regularly

Beef Tacos

  • Add the garlic, White Onions and Pepper to hot oil in a skillet or frying pan, cook for 1 minute then add the Red Chilli and cook for 2 more minutes.
  • Add in all the spices and cook through, stirring for 1 miniute
  • Add the Beef and Break it up on the pan.
    Cook the beef through till fully cooked.
  • Make a well in the. middle of the pan and add the puree, cook this through for a few seconds then mix everything together.
  • Crumble your stock cube over the mix and stir well, then add the water and stir again.
    Let simmer on low heat whilst you check your rice.
  • Add your Chilli and buffalo sauce sauce , then taste and season as desired.
  • In another pan, heat a tbsn of oil and add a corn tortilla, spoon some of the beef onto the tortilla then add a spoonful of each of the cheeses. Fold the tortilla and lightly press it closed with a spatula.
    Once browned and cheese melted, flip and brown the other side.
  • Remove from pan, cut in half and serve wit a portion of Rice, garnished with the red and Spring Onion as well as some sour cream or salsa.
